The Best Apple Cider The Clinton River cascades over the Yates dam, which supplies the headwaters to power the mill. The dam was built to contain the Clinton's churning water for the mill. Several varieties of fresh apples are specially blended throughout the season to produce delicious, 100% natural Yates' cider. Yates cider is made without preservatives. However, we now use a "flash pasteurization" process for your added safety, but refrigeration is still required. It is fat-free, sodium-free, cholesterol-free, an excellent source of fiber and contains only 120 calories per 8 oz. serving. Besides the 300 gallon per hour capacity of fresh cider made, 600 dozen donuts can be baked an hour in our donut shop.
